Try this one out guys.A sure winner for people who love eating panfish!
BBQ’d Crappie and Vegetable Stir Fry:
3/4 lb. Crappie fillets,skin removed 1 tablespoon butter 1 medium green pepper,cut into 3/4–inch chunks 1 medium onion,thinly sliced ¼ teaspoon paprika ¼ teaspoon freshly ground pepper ¼ teaspoon salt 1 medium tomato,cut into 7-8 wedges
Prepare grill for medium direct heat.Cut 2 18x18-inch sheets of heavy-duty foil.Arrange fillets in center of 1 sheet of foil.Fold up edges of foil to hold juices.Dot fillets with butter.Sprinkle fillets evenly with pepper chunks,onion slices,paprika,pepper and salt.Cover with remaining sheet of foil,crimping the edges together to seal.
Place packet on cooking grate.Grill,uncovered,for 5 minutes.Stir,recover.Grill for 3 minutes longer.Add tomato.Re-cover.Grill 5-7 minutes longer,or until fish is firm and opaque and just begins to flake with a fork and tomoto is hot,stirring once or twice.

Dill Crappie Casserole: 2 pounds fresh crappie fillets juice of 2 large lemons 1 large baking potato 1 stalk celery 2 tablespoons dill weed 1 6 1/2-ounce bag of no-salt potato chips 1/2 pint heavy cream 1/2 cup mayonnaise 1 1/4 teaspoon black pepper Place crappie fillets with 2/3 of the lemon juice,1 tablespoon dill weed and black pepper in a mixing bowl.Add cold water to cover top of fillets and refrigerate for 1 hour.Dice and boil potatoes and celery in salted water.Drain well.Peel,dice and saute onions in a small amount of oil until tender.Remove fillets from refrigerator and pat dry. In a mixing bowl,add 1 tablespoon dill weed,1/2 cup mayonnaise,1/2 pint heavy cream and remaining amount of lemon juice and mix well.Dip fillets in sauce and set aside.Add potatoes,celery and onions to sauce and mix well.In a 1 1/2-quart casserole dish,layer fillets and sauce.In a preheated 350 degree oven,cook uncovered for 30 minutes or until it starts to boil.Cover the top of casserole with crushed potato chips and return to oven.Remove when top starts to brown.(about 10 minutes) This recipe works with bluegill too.Hope you all enjoy!

Honey-Fried Walleye:
1 egg,beaten 1 teaspoon honey 1 cup coarsley crushed soda crackers 1/3 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon pepper 2 lbs walleye,skin removed(6 oz. each) Vegetable oil
In small mixing bowl,combine egg and honey.In shallow dish,combine crackers,flour,salt and pepper.Dip fillets first in egg mixture and then dredge in cracker mixture to coat.
In 12-inch skillet,heat 1/8 inch oil over medium heat.Add fillets.Fry 4-7 minutes,or until golden brown,turning over once.Drain on paper toweled lined plate.Serve with lemon wedges and additional honey for drizzling,if you like...

Crappie Fritters:
1/2 cup white wine 1/2 cup water 1 pound crappie 1 cup crushed soda crackers 1/4 cup thinly sliced green onions 1/4 cup unseasoned dry bread crumbs 2 eggs,beaten 2 tablespoons finely chopped onion 2 tablespoons tarter sauce 1 tablespoon snipped fresh parsley 1/2 teaspoon salt 1/4 teaspoon pepper 7-10 drops red pepper sauce vegetable oil
In a skillet,heat wine and water over medium heat until boiling,then add fillets.Cover and reduce heat to low.Simmer for five to seven minutes or until fish is firm and just begins to flake.Drain and discard liquid from fish.In deep fryer or frying pan,heat oil.In large mixing bowl,combine all ingredients,except cracker crumbs.Add fish and mix well.Form fish mixture into 1/2- inch balls.Roll crappie balls in cracker crumbs to coat,then fry two to three minutes or until golden brown.
"This is the best" is what my friends all say and request this the most.......

After reading another post today,I thought you guys and ladies might want a catfish recipe that's great to eat in the fall months or anytime for that matter...LOL
Catfish With Fresh Corn Relish:
4 catfish fillets( at least 1/2 inch thick ) 2 tablespoons paprika 1/2 teaspoon ground red pepper 1/2 teaspoon salt
Rince fish:Pat dry with paper towels.Combine paprika,red pepper and salt in a cup.Lightly sprinkle on both sides of fish.
Oil hot grid on charcoal or gas grill to prevent sticking.Grill fish over medium heat for 5-9 minutes.Halfway through cooking time,turn fish over and continue grilling until fish turns from translucent to opaque throughout.( grilling time depends on thickness of fish ) Allow 3-5 minutes for each 1/2 inch of thickness.Serve with fresh corn relish.
Fresh Corn Relish:
1/4 cup cooked fresh corn,or thawed frozen corn 1/4 cup finely diced green bell pepper 1/4 cup finely slivered red onion 1 tablespoon vegetable oil 2 tablespoons seasoned(sweet) rice vinegar 1/4 teaspoon salt 1/4 teaspoon black pepper 1/2 cup cherry tomatoes,cut into quarters
Toss together corn,green pepper,onion,oil and vinegar in a medium bowl.Season with salt and pepper.Cover and refrigerate until ready to serve.Just before serving,mix in tomatoes.
